Dough Ingredients

  • 1 cup sourdough discard (unfed, 100 percent hydration)
  • 2 cups all-purpose flour plus more for dusting
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup melted butter or coconut oil
  • 1/3 cup warm milk (dairy or plant-based)

Filling Ingredients

  • 1/4 cup softened butter
  • 1/2 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Glaze Ingredients

  • 4 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

Preparation

  • In a large mixing bowl, combine the sourdough discard, flour, sugar, salt, baking powder, melted butter, and warm milk. Mix until a dough forms.
  • Lightly knead the dough on a floured surface for 2 to 3 minutes until it’s smooth.
  • Cover the dough and let it rest for 30 minutes.
  • Roll the dough into a rectangle on a floured surface.
  • Spread the softened butter over the dough, then sprinkle with brown sugar, ground cinnamon, and vanilla extract.
  • Starting from one end, roll the dough tightly into a log. Slice the log into 1-inch pieces.

Baking

  • Place the slices on a baking sheet lined with parchment paper. Bake at 375°F (190°C) for 18 to 20 minutes or air fry at 350°F (175°C) for 10 to 12 minutes until they are golden brown.

Glazing

  • While they bake, whisk together the cream cheese, powdered sugar, milk, and vanilla extract in a small bowl to make the glaze.
  • Drizzle the glaze over the warm cinnamon roll bites and serve right away!

Notes

Store leftover cinnamon roll bites in an airtight container at room temperature for up to 2 days. You can also freeze them for longer storage. For flavor variations, experiment by adding chopped nuts, raisins, or even chocolate chips.
