Dry Ingredients

  • 2/3 cup Oat Bran 60 g
  • 1/4 cup Ground Flaxseed 25 g
  • 1/4 cup Almond Flour 25 g
  • 1/3 cup Unsweetened Flaked Coconut 30 g + extra for coating
  • 1/4 cup Sliced Toasted Almonds 30 g + extra for coating
  • 1/4 cup Mini Chocolate Chips 45 g
  • 2 tablespoons Chia Seeds 30 g
  • 1 pinch Salt

Wet Ingredients

  • 1/4 cup Creamy Almond Butter 60 g
  • 1/4 cup Honey 85 g
  • 2 tablespoons Coconut Oil 30 g
  • 2 tablespoons Coconut Butter 30 g
  • 1 teaspoon Vanilla Extract 5 mL

Instructions

Preparation

  • In a large bowl, stir together the oat bran, ground flaxseed, almond flour, flaked coconut, sliced toasted almonds, mini chocolate chips, chia seeds, and a pinch of salt. Make sure all the dry ingredients are well combined.
  • In a small saucepan, combine the almond butter, honey, coconut oil, coconut butter, and vanilla extract over low heat. Stir gently until everything is melted and smooth.
  • Pour the melted almond butter mixture into the bowl with the dry ingredients. Stir well until everything is evenly moistened and a wet dough forms.
  • Grab a small amount of the mixture and roll it into a ball about 1 inch in diameter.
  • For the coating, add the extra flaked coconut and sliced toasted almonds into a food processor and pulse until you have small crumbs. Roll each ball in this mixture until fully coated.
  • Place your coated bites onto a plate and chill them in the refrigerator for at least 30 minutes to firm up. Once they’re set, they’re ready to enjoy!

Notes

Consider adding a pinch of cinnamon or a dash of sea salt to enhance the flavors. For a nut-free option, substitute almond butter with sunflower seed butter and use sunflower seeds instead of almonds. To reduce sweetness, adjust the amount of honey or use maple syrup.
