Ingredients

For the pastry

  • 330 grams All Purpose Flour
  • 50 grams White Sugar
  • 5 grams Salt
  • 225 grams Unsalted Butter (chilled & cubed) Chilled butter helps create a flaky pastry.
  • 120 milliliters Water (chilled) Chilled water is important for the dough.

For the filling

  • 115 grams Unsalted Butter (softened)
  • 100 grams Light Brown Sugar
  • 150 milliliters Corn Syrup
  • 2 units Eggs (beaten)
  • 5 milliliters Vanilla Extract
  • 1 gram Salt

Instructions

Preparation

  • In a large mixing bowl, sift together the flour, salt, and sugar until well combined.
  • Using a pastry blender or your hands, cut the chilled butter into the flour mixture until it resembles coarse meal.
  • Gradually add the cold water, a little at a time, until the dough just begins to come together.
  • Gather the dough and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • Once chilled, roll out the dough to about 1/8 inch thick and cut out circles with a 4-inch round cutter.
  • Press each dough circle into greased muffin cups.

Making the Filling

  • In a separate bowl, mix the softened butter, light brown sugar, corn syrup, beaten eggs, vanilla extract, and salt until smooth.
  • Pour the filling into each tart shell, filling them about three-quarters full.

Baking

  • Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes or until the filling is set and the tops are golden.

Notes

Allow tarts to cool slightly before removing from the muffin tin. Dust with powdered sugar or serve with whipped cream for an extra touch. For storage, keep in an airtight container.
