Ingredients

Wet Ingredients

  • 150 g unsweetened applesauce
  • 60 g almond butter or any nut butter of your choice
  • 50 g honey or maple syrup adjust based on preference
  • 1 each ripe banana, mashed
  • 1 tsp vanilla extract

Dry Ingredients

  • 250 g rolled oats
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 50 g dark chocolate chips or raisins optional

Instructions

Preparation

  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a large bowl, mix the mashed banana, applesauce, almond butter, honey or maple syrup, and vanilla extract until well combined.
  • In another bowl, combine rolled oats, ground cinnamon, and salt, then mix until blended.
  • Gradually add the dry ingredient mixture to the wet mixture, stirring until combined.
  • If desired, fold in dark chocolate chips or raisins.
  • Using a tablespoon, scoop out portions of the mixture and form into small balls. Place them on the prepared baking sheet.

Baking

  • Bake the cookies for about 15-20 minutes, or until golden brown.
  • Remove from the oven; let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For chewier cookies, slightly underbake them. Store in an airtight container for up to a week or freeze for longer storage.
