  • 240 ml egg whites
  • 4 large eggs
  • 250 g cottage cheese
  • 60 g grated cheddar cheese

Vegetables

  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small onion, chopped
  • 100 g fresh spinach, chopped
  • 100 g broccoli florets, chopped

  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preparation

  • Preheat your oven to 190°C (375°F). Lightly grease a 23x33 cm baking dish with olive oil or cooking spray.
  • In a large mixing bowl, whisk together the egg whites and whole eggs until well combined and fluffy.
  • Stir in the cottage cheese and grated cheddar cheese into the egg mixture, ensuring it's mixed evenly.
  • In a skillet over medium heat, add the olive oil (or use cooking spray) and sauté the diced red and green bell peppers, chopped onion, and broccoli florets for about 5 minutes, or until they are slightly softened.
  • Add the chopped spinach into the skillet and cook for an additional 2 minutes until wilted.
  • Combine the sautéed vegetables with the egg mixture, adding in the garlic powder, salt, and black pepper. Mix everything together well.
  • Pour the combined mixture into the prepared baking dish, making sure to spread it out evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the bake is set and the top is golden brown.
  • Allow it to cool for a few minutes before cutting into slices. Serve warm.
