Ingredients

For the filling

  • 1.5 cups 1 1/2 cups ham, diced Diced cooked ham
  • 1 cup 1 cup spinach Fresh spinach, roughly chopped
  • 0.5 cup 1/2 cup shredded cheddar cheese Shredded cheddar
  • 0.5 cup 1/2 cup shredded Swiss cheese Shredded Swiss
  • 2 tbsp 2 tbsp flour All-purpose flour
  • 1 cup 1 cup milk Whole milk
  • 2 tbsp 2 tbsp unsalted butter For making the sauce
  • 0.5 tsp 1/2 tsp mustard powder Adds flavor to the filling
  • 1 tsp 1 tsp onion powder Optional seasoning
  • 1 tsp 1 tsp garlic powder Optional seasoning
  • Salt and pepper to taste

For the pastry

  • 2 sheets 2 sheets puff pastry, thawed Use store-bought or homemade puff pastry

Instructions

Preparation

  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line two baking sheets with parchment paper.
  • In a medium saucepan over medium-high heat, melt the butter.
  • Once the butter is melted, add in the flour and whisk for about a minute.
  • Gradually add the milk while continuing to whisk to avoid lumps.
  • Stir in the mustard powder, onion powder, and garlic powder, whisking for 3-4 minutes until the sauce starts to thicken.
  • Remove the saucepan from heat and mix in the shredded cheddar and Swiss cheese until fully melted.
  • Add the spinach and diced ham to the cheese sauce, stirring until the spinach is wilted. Taste and season with salt and pepper as needed.

Assembly

  • Take the thawed puff pastry sheets and cut each into 6 squares, placing them on your prepared baking sheets.
  • Spoon about 1/4 cup of the cheese and ham mixture onto the center of each pastry square.
  • Fold up each edge of the pastry to cover most of the filling, pinching to seal them if necessary.

Baking

  • Bake for 18-20 minutes, or until the puff pastry is golden brown.
  • Allow them to cool for a couple of minutes on the baking sheet before serving.

Notes

Serve on a large platter garnished with fresh herbs or a side of dipping sauce, like mustard or a creamy dressing. They're great as an appetizer, snack, or part of a brunch spread.
