Ingredients

Custard Mixture

  • 4 large large eggs
  • 240 ml heavy cream
  • 240 ml whole milk
  • 100 g granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Bread and Toppings

  • 1 loaf brioche or challah bread Can substitute with thick-cut bread.
  • Butter for greasing For greasing the baking dish.
  • Extra sugar for caramelising

Instructions

Preparation

  • In a large bowl, whisk together the eggs, heavy cream, milk, sugar, vanilla extract, and cinnamon until the mixture is smooth and well combined.
  • Cut the brioche or challah into thick slices and arrange them in a greased baking dish, ensuring they fit snugly.
  • Pour the egg mixture over the bread slices, pressing down gently to help them soak up the custard. Cover with cling film and refrigerate for at least 2 hours, or overnight for the best results.

Baking

  • Preheat your oven to 180°C (350°F).
  • Bake the French toast for 30-35 minutes, or until it’s golden brown and set in the middle.

Caramelising and Serving

  • Allow the dish to cool slightly. Then, sprinkle a thin layer of sugar over the top.
  • Use a kitchen torch to caramelise the sugar until it’s bubbly and golden for that classic crème brûlée finish.
  • Serve warm, optionally garnished with fresh fruit or a drizzle of maple syrup.

Notes

For an extra touch of flavour, consider adding a splash of orange zest or a pinch of nutmeg into the custard mixture. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven for best results.
