  • 200 g rolled oats
  • 600 ml milk (or a non-dairy alternative)
  • 100 g brown sugar
  • 2 large eggs Large eggs

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 50 g melted butter (or coconut oil) Use as preferred

Instructions

Preparation

  • Preheat your oven to 180°C (350°F) and grease a baking dish (about 20cm x 20cm) with some butter or oil.
  • In a large bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Mix them well to ensure everything is evenly distributed.
  • In another bowl, whisk together the eggs, milk, melted butter (or coconut oil), and vanilla extract until smoothly combined.
  • Pour the wet ingredients into the dry ingredients. Stir gently until everything is combined. If you’re adding raisins or nuts, fold them in now.
  • Transfer the mixture into your prepared baking dish, spreading it out evenly.

Baking

  • Bake in the preheated oven for about 35-40 minutes, or until the top is golden and the centre has set.

Serving

  • Allow it to cool for a few minutes before serving. It will naturally thicken up a bit as it cools.
  • Cut it into squares or scoop it into bowls. For a real treat, drizzle a spoonful of cream cheese icing or a simple glaze made from icing sugar and milk over the top.
  • Serve warm with an added sprinkle of cinnamon or a dusting of powdered sugar. Fresh fruit, yogurt, or nut butter can be added for extra flavor.

Notes

Try different flavors: Swap cinnamon for nutmeg or add a dash of ginger for a spicy twist. For a gluten-free option, use certified gluten-free oats and ensure all other ingredients comply.
