Ingredients

Main Ingredients

  • 4 pcs Medjool dates, pitted and chopped
  • 60 ml water
  • 240 ml canned no salt added black beans, drained and rinsed
  • 30 g natural almond or peanut butter
  • 25 g unsweetened cocoa powder
  • 28 g bittersweet 70% cocoa chocolate, melted
  • 2.5 ml vanilla extract
  • 30 g ground almonds

Instructions

Preparation

  • Start by washing your hands thoroughly with soap and warm water for at least 20 seconds. Clean and dry all surfaces and equipment you’ll be using.
  • In a microwave-safe bowl, combine chopped dates and water. Cover the bowl and microwave on High for about 1 minute, or until the dates are softened and the water is absorbed.
  • Scrape the warmed date mixture into a food processor. Add the black beans, almond or peanut butter, and cocoa powder. Puree the mixture until it’s very smooth, stopping occasionally to scrape down the sides for an even blend.
  • Once your mixture is smooth, transfer it to a bowl. Stir in the melted chocolate and vanilla extract until well combined.
  • Cover the bowl and place it in the refrigerator. Chill for about 45 minutes, or until the mixture is slightly firm and easier to handle.
  • Using a mini ice cream scoop, tablespoon, or your clean hands, roll the chilled mixture into bite-sized balls. Place them on a small baking sheet.
  • Roll each ball in the ground almonds, coating them evenly. Store any leftovers in the refrigerator for up to one week.

Notes

Make it Nut-Free: Substitute sunflower seed butter for a nut-free option. Add Some Texture by mixing chopped nuts or seeds for crunch. Sweeten if needed with maple syrup or honey.
