Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.
  • Add the cold butter to the flour mixture. Use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.
  • Stir in the shredded cheddar cheese and chopped fresh herbs.
  • Make a well in the center of the mixture and pour in the milk. Stir gently until just combined, being careful not to overmix.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  • Pat the dough into a circle about 1 inch thick.
  • Use a sharp knife to cut the dough into 8 wedges.

Baking

  • Place the wedges on your prepared baking sheet, leaving space between each scone.
  • Brush the tops with the beaten egg for a beautiful golden finish.
  • Bake for 15 to 20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  • Allow to cool slightly on a wire rack before serving.
