Ingredients

Meat Ingredients

  • 680 g ground beef or a mix of beef and pork
  • 225 g ground Italian sausage optional, for flavour
  • 2 tbsp butter or beef tallow for browning the meat
  • 1 tsp sea salt to taste
  • 0.5 tsp black pepper optional, depending on seasoning preferences

Cheese Ingredients

  • 480 g whole milk ricotta cheese
  • 1 large egg for binding the ricotta
  • 200 g shredded mozzarella cheese
  • 50 g grated Parmesan cheese
  • 8-10 slices mozzarella cheese or provolone, for 'noodles'

Instructions

Preparation

  • In a large skillet, melt the butter or beef tallow over medium heat. Add the ground beef and Italian sausage (if using) to the skillet. Cook until the meat is browned and crumbled, seasoning lightly with sea salt and black pepper if desired. Once cooked, set aside.
  • In a medium bowl, combine the ricotta cheese, large egg, and half of the grated Parmesan cheese. Stir well until the mixture is creamy and smooth.
  • Preheat your oven to 190°C (375°F).
  • Lightly grease a baking dish with some butter or beef tallow to prevent sticking.

Assembly and Baking

  • Start by adding a thin layer of the meat mixture to the bottom of the baking dish. Follow this with a layer of mozzarella cheese slices, then add half of the ricotta mixture, and top with a layer of shredded mozzarella cheese. Repeat these layers until all ingredients are used, making sure to finish with a generous layer of mozzarella and the remaining Parmesan cheese on top.
  • Cover the assembled dish with foil and bake in the preheated oven for 20 minutes. After this time, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbling and golden.

Serving

  • Once out of the oven, let the lasagna cool for about 10 minutes before slicing. This will help you achieve neat layers when serving.
  • Serve warm with an extra sprinkle of Parmesan cheese on top for that finishing touch.

Notes

Feel free to experiment with different types of ground meat for a unique flavour profile. Consider adding herbs to the ricotta for an extra flavour boost or substituting some mozzarella with other cheeses like gouda or cheddar.
