  • 0.75 cups dried cranberries approx. 115 g
  • 0.75 cups pecans, chopped approx. 85 g
  • 1 teaspoon vanilla extract 5 ml
  • 0.25 teaspoon sea salt 1.5 g, optional

Preparation

  • Begin by melting the white chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth and fully melted. Be careful not to overheat.
  • Once the chocolate is melted, fold in the dried cranberries and chopped pecans until evenly coated.
  • Stir in the vanilla extract and sprinkle in the sea salt, mixing well.
  • Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet, shaping them into clusters.
  • Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has completely hardened.

Notes

For a dairy-free option, use dairy-free white chocolate. You can substitute pecans with walnuts or almonds. For a fruity twist, dried cherries or apricots work well as alternatives.
