Ingredients

For the truffles

  • 1 cup sugar-free white chocolate chips (170g)
  • 3 tbsp cream cheese, softened (45g)
  • 2 tbsp Greek yogurt, optional for added protein (30g)
  • 1 tsp vanilla extract (5ml)
  • 1 tbsp powdered erythritol or allulose, optional (15g)
  • 1/4 cup finely chopped no-sugar-added cherries (fresh or frozen-thawed, 40g)
  • 1 tbsp almond flour (8g)
  • 1/4 cup sugar-free white chocolate, melted (about 42g)
  • as needed for garnish freeze-dried cherry dust or shaved sugar-free chocolate (optional)

Instructions

Preparation

  • Begin by heating the sugar-free white chocolate in a microwave-safe bowl. Heat in 20–30 second intervals, stirring well in between until the chocolate is smooth and melted. Be careful not to scorch it.
  • In a separate bowl, beat the softened cream cheese with Greek yogurt (if using) and vanilla extract until well blended.
  • Pour the melted chocolate into the cream cheese mixture and stir until everything is thick and glossy.
  • Pat the finely chopped cherries dry to remove excess moisture. Toss them with almond flour, then gently fold them into the chocolate mixture.
  • Place the mixture in the refrigerator for 20–30 minutes, allowing it to firm up enough to scoop.
  • Once chilled, scoop the mixture and roll it into 12 small balls.
  • For an extra touch, dip or drizzle the truffles with the melted sugar-free white chocolate, and then garnish with freeze-dried cherry dust or shaved sugar-free chocolate.
  • Return the truffles to the refrigerator until they are fully set. Enjoy them chilled for a creamy, smooth texture!

Notes

Keep the truffles in an airtight container in the refrigerator for up to a week. They can also be frozen for longer-lasting enjoyment. Feel free to experiment by adding different nuts or seeds for added crunch. Adjust sweetness by varying erythritol or allulose.
