Instructions

Preparation

  • Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and powdered sugar until the mixture is light and fluffy.
  • Mix in the vanilla extract until well combined.
  • Gradually stir in the all-purpose flour and salt until just combined. Be careful not to over-mix.
  • Gently fold in the chopped dried cherries and white chocolate chips or chunks into the dough.
  • Turn the dough out onto a lightly floured surface and knead it gently until it comes together.
  • Roll the dough into a log about 2 inches in diameter and wrap it in plastic wrap. Chill the log in the refrigerator for 30 to 60 minutes until it is firm.

Baking

  • Once chilled, slice the dough into 1/4 inch rounds and place them on the prepared baking sheet, spacing about 1 inch apart.
  • Bake for 12 to 15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
