Ingredients

Cookie Base

  • 1/2 cup butter, softened Make sure to soften butter to room temperature.
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Mix-Ins

  • 3/4 cup white chocolate chips
  • 1/2 cup chopped macadamia nuts Can substitute with walnuts or pecans.
  • 1 cup dried cherries Can substitute with cranberries.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease a cookie sheet or line it with parchment paper.
  • In a large mixing bowl, combine the softened butter, brown sugar, and white sugar. Beat until fluffy and pale in color, about 3-5 minutes.
  • Beat in the egg and vanilla extract until well incorporated.
  • In a separate bowl, stir together the all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the butter mixture, using a wooden spoon to combine gently.
  • Fold in the white chocolate chips, dried cherries, and chopped macadamia nuts until evenly distributed.
  • Drop heaping spoonfuls of the cookie batter onto the prepared cookie sheet, leaving space between each mound.

Baking

  • Bake the cookies in the preheated oven for 8-10 minutes or until the edges turn golden brown.
  • Let the cookies cool on the baking sheet for about 2 minutes, then transfer them to a wire rack to cool completely.

Notes

For serving, pair with milk or coffee, and dust with powdered sugar if desired. Add a scoop of vanilla ice cream for an indulgent treat!
