Ingredients

For the Chocolate Banana Ice Cream

  • 3 medium Ripe bananas, sliced and frozen The riper, the sweeter.
  • 1/4 cup Unsweetened cocoa powder Use good quality for best flavor.
  • 1 tablespoon Plant-based milk Almond, oat, soy, or any preferred milk.
  • 1 teaspoon Vanilla extract Optional, but adds a cozy flavor.
  • 1 pinch Salt Enhances the chocolate flavor.

For the Sandwich Part

  • 2 pieces Chocolate banana cookies Or use simple homemade oat cocoa rounds.

Instructions

Preparation

  • Drop the frozen banana slices into a food processor or a strong blender.
  • Add cocoa powder, a small splash of plant milk, vanilla (if using), and a pinch of salt.
  • Blend and scrape down the sides; continue blending until a thick soft-serve texture is achieved.

Assembly

  • Scoop the chocolate nice cream onto one cookie, top with another cookie, and gently press.
  • If the nice cream is soft, freeze assembled sandwiches for 30 to 60 minutes to firm up.
  • Optionally, roll the sides in chopped nuts or cacao nibs if desired.

Notes

These sandwiches store well in the freezer and can be kept individually wrapped for about 2 weeks. They taste best when served right after blending for a soft-serve experience.
