  • 3 tablespoons chia seeds
  • 1 cup milk of choice, unsweetened if possible (almond, oat, dairy, or coconut)
  • 1/2 cup yogurt (Greek for protein, or coconut yogurt to keep it dairy free)
  • 1 to 2 tablespoons maple syrup or honey, to taste
  • 1 teaspoon pure vanilla extract
  • pinch fine sea salt
  • 3/4 to 1 cup mixed berries, fresh or thawed from frozen
  • Optional toppings: sliced almonds, coconut flakes, lemon zest, granola, or dark chocolate shavings

Instructions

Preparation

  • In a mixing bowl or large jar, whisk the milk, vanilla, sweetener, and salt.
  • Sprinkle in the chia seeds and whisk well for about 30 seconds to fully coat the seeds.
  • Let it sit for 10 minutes, then whisk again to break up any clumps for a super smooth texture.
  • Cover and chill for at least 3 hours, preferably overnight for a fully thick set.
  • Stir in the yogurt gently to maintain some texture, then layer into bowls or jars with the berries.
  • Add optional toppings, taste, and adjust sweetness if needed.

Notes

For a thicker pudding, reduce the milk to 2/3 cup and add yogurt at the end. Use coconut yogurt for a dairy-free option. Chilled pudding lasts about 4 days; store jars in the coldest part of your fridge. Perfect for busy mornings or after-school snacks.
