  • 2 lbs ground beef (80/20 preferred for juiciness)
  • 1 cup shredded Swiss cheese
  • 1 cup cooked beef bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.
  • Cook the beef bacon until crispy, then remove it from the pan and set aside. Sauté the sliced mushrooms in the leftover bacon fat until they’re browned.
  • In a large mixing bowl, combine ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix well.
  • Gently fold in half of the shredded Swiss cheese into the meat mixture.
  • Shape the meat mixture into a loaf on the lined baking sheet. Press the remaining cheese, sautéed mushrooms, and chopped bacon on top.

Cooking

  • Bake the meatloaf for 45 to 55 minutes, until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for about 10 minutes before slicing.

Serving

  • Garnish with fresh parsley before serving.

Notes

Add grated zucchini or finely chopped bell peppers for extra nutrition. For a different taste, switch to cheddar or mozzarella cheese. For a spicy kick, mix in crushed red pepper or hot sauce.
