Ingredients

Sweet Potato Rounds

  • 2 large Sweet potatoes, peeled and cut into ½-inch rounds
  • 2 tablespoons Olive oil
  • to taste Salt and black pepper

Toppings

  • 4 oz Cream cheese, softened
  • ½ cup Cranberry sauce
  • 2 tablespoons Chopped pecans or walnuts, toasted
  • 1 teaspoon Fresh thyme leaves (optional, for garnish)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Arrange the sweet potato rounds on the prepared baking sheet. Brush each round with olive oil and season with salt and black pepper.

Baking

  • Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the rounds are tender and slightly golden.
  • Once they’re baked, remove from the oven and spread about a teaspoon of softened cream cheese on each round.
  • Top with a dollop of cranberry sauce and sprinkle with toasted nuts for that lovely crunch.
  • If desired, garnish with fresh thyme leaves. Serve warm and enjoy the delightful flavors!

Notes

For a spicy kick, consider adding cayenne pepper or smoked paprika to the olive oil. You can also experiment with different toppings like feta cheese or balsamic glaze. These rounds can be made in advance and kept in the refrigerator before baking.
