Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 tsp ground cinnamon
  • 1/2 cup brown sugar

Wet Ingredients

  • 1/2 cup melted butter
  • 1/3 cup pure maple syrup Additional tablespoon may be added for stronger maple flavor.
  • 1/4 cup milk Reduce by 1 tablespoon if adding apples.
  • 1 large egg
  • 1 tsp vanilla extract

Add-ins

  • 1/2 cup chopped pecans Can substitute half for walnuts.

For the Glaze

  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup
  • 1 tbsp milk

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a mini loaf pan or mini muffin pan.
  • In a bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and brown sugar.
  • In another bowl, whisk together the wet ingredients: melted butter, maple syrup, milk, egg, and vanilla.
  • Stir the dry ingredients into the wet ingredients just until combined.
  • Fold in the chopped pecans.

Baking

  • Scoop the batter into the prepared pan, filling each cavity about two-thirds full.
  • Bake for 12 to 15 minutes for mini muffins or 16 to 20 minutes for mini loaves, until the tops spring back and a toothpick comes out mostly clean.
  • Cool in the pan for 5 minutes, then transfer to a wire rack.

Glazing

  • Once slightly warm, spoon the maple glaze over the top so it sets into a thin, sweet crust.

Notes

Store covered at room temperature for up to 2 days or in the fridge for up to 5 days. Rewarm in a low oven to refresh. For freezing, let cool completely, skip the glaze, and freeze in a single layer.
