Ingredients

For the Meatballs

  • 450 grams ground chicken (1 pound)
  • 1 piece egg
  • 60 grams panko breadcrumbs (1/2 cup)
  • 2 pieces green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 15 milliliters soy sauce (1 tablespoon)
  • 5 milliliters sesame oil (1 teaspoon)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Glaze

  • 80 milliliters sweet chili sauce (1/3 cup)
  • 15 milliliters soy sauce, for glaze (1 tablespoon)
  • 5 milliliters rice vinegar (1 teaspoon)
  • 5 milliliters honey (optional, 1 teaspoon)

For Garnish

  • to taste toasted sesame seeds
  • to taste chopped cilantro or green onions
  • to taste lime wedges (optional)

Instructions

Preparation

  • Preheat your oven to 200 degrees C (400 degrees F) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the ground chicken, egg, panko breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix gently until combined.
  • Roll the mixture into balls, using about 1 1/2 tablespoons for each meatball.

Cooking

  • Place the meatballs on the prepared baking sheet and bake in the preheated oven for 16 to 18 minutes, or until the internal temperature reaches 74 degrees C (165 degrees F).
  • While the meatballs are baking, prepare the glaze by whisking together the sweet chili sauce, soy sauce, rice vinegar, and honey in a small saucepan over medium heat for 2 to 3 minutes.

Serving

  • Once the meatballs are done, remove them from the oven and toss them in the glaze until well coated.
  • Serve garnished with toasted sesame seeds and fresh herbs. Enjoy!

Notes

Meat options include turkey or beef. For added spice, consider incorporating red pepper flakes. These meatballs freeze well, allowing for batch cooking.
