Instructions

Preparation

  • Slice the cabbage into ribbons about as wide as your finger. Rinse and pat it dry.
  • Dice the onion and mince the garlic in advance.

Cooking

  • Cook the bacon in a large skillet over medium heat until crispy. Remove and set aside, keeping 1-2 tablespoons of drippings in the pan.
  • Add the diced onion and a pinch of salt to the skillet, cooking until golden.
  • Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Add the cabbage in handfuls, seasoning with salt, pepper, smoked paprika, and red pepper flakes. Cook for 10-12 minutes, stirring occasionally.
  • When the cabbage is tender yet still has a bite, stir in the butter and apple cider vinegar, then fold the bacon back in.
  • Taste and adjust seasoning as needed, adding a pinch of sugar if desired.

Notes

For extra flavor, add hot sauce at the end. You can also use turkey bacon, smoked sausage, or a vegetarian alternative instead of bacon.
