Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or line it with parchment paper for easy removal.
  • In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well-blended and set aside.
  • In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and fluffy.
  • Add the eggs, one at a time, mixing after each addition. Then stir in the vanilla extract until combined.
  • Gradually add the dry mixture to the wet ingredients, blending until just combined; avoid overmixing.
  • Spread half of the batter evenly into the prepared baking dish.
  • In a small bowl, combine the additional granulated sugar and ground cinnamon. Sprinkle this mixture evenly over the batter layer in the baking dish.
  • Drop spoonfuls of the remaining batter over the cinnamon-sugar layer, spreading it slightly to cover as much as possible.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Once baked, allow the bars to cool in the baking dish before cutting into squares. Dust with additional cinnamon sugar before serving.

Notes

For best results, do not overmix the batter after adding the dry ingredients to keep the crumb bars tender. Store any leftover bars in an airtight container at room temperature for up to 3-4 days, and refrigerate for longer storage.
