Ingredients

For the dough

  • 1 cup freshly shredded smoked cheddar cheese Freshly shredded preferred
  • 1 cup freshly shredded sharp cheddar cheese Freshly shredded preferred
  • 1 stick of room temperature butter Ensure butter is at room temperature
  • 1 cup all-purpose flour Can substitute with gluten-free flour if needed
  • 1 teaspoon dried rosemary
  • 1 teaspoon freshly cracked black pepper
  • 3/4 teaspoon salt

Instructions

Preparation

  • In a mixer fitted with a paddle attachment, combine the room-temperature butter until creamy and fluffy.
  • Stir in the freshly shredded smoked cheddar and sharp cheddar. Beat until fully combined and smooth.
  • Gradually add the flour, dried rosemary, cracked black pepper, and salt to the cheesy mixture. Mix until the dough forms and pulls away from the sides of the bowl.
  • Split the dough into two equal halves. Roll each half into a log about 1 inch in diameter.
  • Wrap each log tightly in plastic wrap and freeze for about 1 hour to help the dough hold its shape when baking.

Baking

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Once frozen, take the dough out and slice it into 1/4 inch thick discs. Place them onto a parchment paper-lined baking sheet with space apart.
  • Bake the crackers for about 23 minutes or until golden and crisp.
  • Allow the crackers to cool to room temperature for the best texture and flavor before enjoying.

Notes

For extra flavor, experiment with different herbs and spices. Store leftover crackers in an airtight container at room temperature for up to a week or freeze them for longer shelf life.
