Ingredients

Crepe Batter

  • 1/2 cup cottage cheese (any fat level works) Use a blender for best results.
  • 2 pieces eggs
  • 1/3 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons maple syrup or honey (optional) Sweetener is optional.
  • 1/2 cup flour (all purpose or a 1 to 1 gluten free blend)
  • 1 scoop vanilla protein powder (optional but recommended)
  • 1 pinch salt
  • 1/4 teaspoon instant yeast (optional) For gentle lift.
  • as needed Butter or oil for the pan For cooking.

Instructions

Batter Preparation

  • Blend cottage cheese, eggs, milk, vanilla, and sweetener until smooth.
  • Add flour, protein powder, salt, and yeast. Blend again just until smooth.
  • Let the batter rest for 10 to 20 minutes if possible.

Cooking Crepes

  • Heat a nonstick pan on medium and lightly butter it.
  • Pour a small amount of batter in and swirl the pan quickly so it spreads thin.
  • Cook for about 45 to 60 seconds, then flip and cook for another 20 to 30 seconds.
  • Stack cooked crepes on a plate. Fill, roll, and enjoy.

Notes

Let the batter rest for a better texture. Use medium heat to avoid rubbery crepes. Keep crepes thin and do not overfill when rolling.
