Ingredients

For the Chia Cup Base

  • 1 cup fresh strawberries Can use frozen; thaw first for blending.
  • 1/4 cup lemon juice Fresh squeezed is preferred.
  • 1/2 cup milk of choice Dairy, almond, oat or coconut milk all work.
  • 3 tablespoons chia seeds These act as the thickener.
  • 1 tablespoon sweetener Maple syrup, honey, or simple syrup.

Instructions

Preparation

  • Blend or mash strawberries with a little sweetener.
  • In a bowl, stir together lemon juice, milk of choice, and chia seeds.
  • Chill the mixture for at least 2 hours, stirring once or twice to prevent clumping.
  • Layer the chilled mixture into small jars, starting with the strawberry layer followed by the lemon chia layer.
  • Let the cups set in the fridge before serving.

Notes

For an ombre effect, pour strawberry puree into cups first. Can add toppings like sliced strawberries or granola. Lasts 3 to 4 days in the fridge.
