Ingredients

Main Ingredients

  • 2 cups fresh or frozen strawberries Use ripe strawberries for best flavor.
  • 1 cup plain kefir Unsweetened preferred.
  • 1-2 tablespoons honey or maple syrup Add more to taste as needed.
  • 1 teaspoon vanilla extract Optional for added flavor.
  • 1 pinch salt Enhances flavor.

  • 1 set popsicle molds or small paper cups Use sticks for unmolding.

Preparation

  • Wash and hull the strawberries if they are fresh. If they are frozen, let them sit for 5 minutes to soften.
  • Add strawberries, kefir, sweetener, vanilla, and salt to a blender.
  • Blend until smooth. Taste it; if it needs more sweetness, add some honey.
  • Pour the mixture into molds and tap on the counter to eliminate air bubbles.
  • Freeze until solid, usually taking about 4 to 6 hours.

Notes

For best results, use ripe strawberries, and do not skip the pinch of salt. Popsicles are forgiving; slight variations in ingredients will still taste great.
