Ingredients

Main Ingredients

  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • 1/2 cup milk of choice
  • 1 teaspoon vanilla extract
  • 1 cup oat flour (or blended oats)
  • 1 scoop vanilla protein powder (about 25 to 30g)
  • 1 teaspoon baking powder
  • 1 to 1 1/2 teaspoons pumpkin pie spice
  • 1 pinch salt
  • 1 to 2 tablespoons maple syrup or honey (optional, adjust to taste)

Optional Mix-Ins

  • as needed mini chocolate chips for a chocolate flavor
  • as needed chopped pecans for added crunch
  • as needed dried cranberries

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a mini muffin pan really well.
  • In a mixing bowl, whisk together the pumpkin, eggs, milk, vanilla, and sweetener if using.
  • Stir in the oat flour, protein powder, baking powder, spice, and salt until just combined.
  • Spoon the batter into the greased mini muffin pan, filling each cup about 3/4 full.

Baking

  • Bake for 10 to 14 minutes, until the tops look set and a toothpick inserted comes out mostly clean.
  • Let the bites cool in the pan for 10 minutes before removing, as they will firm up as they cool.

Notes

These pancake bites can be stored in an airtight container on the counter for 1 day, in the fridge for 4 to 5 days, or frozen for up to 2 months. Reheat in the microwave or oven.
