Ingredients

Main Ingredients

  • 1.5 cups chilled pineapple juice Use 100% pineapple juice, not pineapple drink.
  • 0.5 cups full fat coconut milk Stir the can well before measuring.
  • 1-2 tablespoons sugar or honey To taste, optional.
  • 1 tablespoon lime juice Add a squeeze of fresh lime for extra flavor.
  • 1 pinch salt Enhances the flavor of pineapple.

Instructions

Preparation

  • In a bowl or large measuring cup, whisk together chilled pineapple juice, coconut milk, lime juice, salt, and sweetener if using.
  • Pour the mixture into a shallow freezer-safe container.

Freezing

  • Freeze for 30 to 45 minutes, then stir well with a fork. Scrape frozen edges into the center.
  • Repeat this every 30 minutes for about 2 to 3 hours, until it looks like fluffy soft sorbet.
  • Scoop and serve right away or freeze longer for a firmer texture.

Notes

Taste test before freezing, as sweetness can vary by brand of pineapple juice. Allow sorbet to sit out for a few minutes before scooping if frozen overnight. Cover with parchment or plastic wrap to prevent icy crystals.
