Ingredients

Base Ingredients

  • 3 tablespoons Melted unsalted butter
  • 1/3 cup Creamy peanut butter Use well-stirred for best results.
  • 1/3 cup Light brown sugar Packed for moisture.
  • 2 tablespoons Granulated sugar
  • 1 large Egg yolk Adds fudgy texture.
  • 1 tablespoon Milk or water To add moisture.
  • 1/2 cup All-purpose flour Spoon and level for accuracy.
  • 2 tablespoons All-purpose flour
  • 1/4 teaspoon Baking powder
  • 1/8 teaspoon Fine salt Reduce if peanut butter is salted.
  • 1 teaspoon Vanilla extract For flavor.

Optional Mix-Ins

  • 1/3 cup Chocolate chips Mini or regular.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
  • In a medium bowl, whisk together melted butter and creamy peanut butter until smooth and shiny.
  • Whisk in light brown sugar, granulated sugar, egg yolk, milk, and vanilla until fully combined.
  • Sprinkle in flour, baking powder, and fine salt. Fold until flour disappears.
  • Fold in chocolate chips, if using. Spread the batter in the prepared pan and smooth the top.

Baking

  • Bake for 18 to 22 minutes, until edges are set and the center is slightly soft with a light golden top.

Cooling

  • Cool in the pan for 10 minutes, then lift out and cool for another 10 on a rack before slicing into squares.

Notes

These blondies keep for 3 days at room temperature in an airtight container, or freeze well. Rewarm a square for 10 to 15 seconds for that fresh-baked feel.
