Ingredients

For the Chia Cups

  • 1/4 cup Chia seeds
  • 1 cup Coconut milk (canned for richer, carton for lighter)
  • 1-2 tablespoons Sweetener (maple syrup, honey, or sugar) Adjust based on the sweetness of mango
  • 1/2 teaspoon Vanilla Optional, but adds a cozy flavor
  • a pinch Salt Enhances the coconut flavor
  • 1-2 Ripe mango, diced Use a ripe mango for best flavor
  • to taste Optional toppings (toasted coconut flakes, lime zest, or chopped nuts)

Instructions

Preparation

  • Mix the coconut milk, sweetener, vanilla, and salt in a bowl.
  • Stir in the chia seeds and mix well.
  • Stir again after 10 minutes to break up any clumps.
  • Cover and chill the mixture for at least 3 hours, preferably overnight.
  • While the chia mixture chills, dice the mango into small pieces.
  • If the mango isn't sweet enough, toss it with honey and lime juice.

Serving

  • Spoon the chia pudding into small jars or cups.
  • Add a thick layer of diced mango on top.
  • Sprinkle with toasted coconut for crunch.
  • For an extra touch, drizzle a tiny amount of coconut milk on top.

Notes

Use ripe mango to enhance flavor and texture. Make ahead for best results overnight. Can also serve with additional toppings like sliced banana, nuts, or mini chocolate chips.
