Preparation

  • In a mixing bowl, stir together the ricotta cheese, protein powder, lemon zest, lemon juice, maple syrup, and salt until smooth and creamy.
  • If your ricotta is grainy, mash it longer with a fork or blend for a few seconds for a smoother texture.
  • Spoon the mixture into small cups or jars.
  • Chill in the refrigerator for at least 30 minutes to set.

Notes

These cups are best enjoyed within 3 days. They can also be frozen, but the texture may change to a cheesecake-like consistency. Suggestions for toppings include berries and crushed graham crackers.
