Ingredients

Brownie Ingredients

  • 5 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 2 tablespoons light brown sugar Optional, but adds chew
  • 1 large egg Room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup all-purpose flour Leveled
  • 1/4 teaspoon fine salt
  • 1/8 teaspoon espresso powder Optional but recommended
  • 1/3 cup chocolate chips or chopped chocolate

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Line an 8 by 4 inch loaf pan with parchment paper, leaving a little overhang.

Mixing

  • In a microwave-safe bowl, melt the butter until just liquid. Whisk in cocoa and espresso powder until smooth and glossy.
  • Add granulated sugar and brown sugar. Whisk in the egg and vanilla for about 30 to 45 seconds until the mixture looks thick and shiny.
  • Sprinkle in flour and salt. Stir gently until just combined. Fold in chocolate chips.

Baking

  • Spread the mixture into the prepared pan and smooth the top. Bake for 16 to 19 minutes, until the center looks set but still soft. A toothpick should come out with moist crumbs, not wet batter.

Cooling

  • Cool for 5 to 10 minutes, lift out with the parchment sling, then cut into neat squares.

Notes

For swirls, drop spoonfuls of peanut butter or raspberry jam on top and drag a knife through. For added crunch, sprinkle chopped walnuts or pecans over the batter before baking.
