Ingredients

Fig Filling

  • 1 cup Dried figs, chopped Soft ones are easier to work with
  • 1/4 cup Water
  • 1 tablespoon Lemon juice Squeeze for brightening flavor
  • 1 pinch Salt
  • 1 tablespoon Honey or brown sugar Optional, based on fig sweetness

Oat Bar Layers

  • 1 cup Old fashioned oats
  • 1/2 cup All purpose flour Or a 1 to 1 gluten free blend
  • 1/2 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon Optional but enhances flavor
  • 1/4 cup Butter, melted Or use coconut oil
  • 1/2 cup Chopped walnuts

Instructions

Preparation

  • For the fig filling, combine chopped figs, water, lemon juice, and salt in a saucepan over low heat, stirring until thickened into a paste.
  • For the oat layer, combine oats, flour, brown sugar, baking powder, salt, cinnamon, melted butter, and walnuts in a mixing bowl.
  • Press two thirds of the oat mixture firmly into the bottom of a lined 8x8 inch baking pan.
  • Spread the thick fig filling evenly over the pressed oat layer.
  • Sprinkle the remaining oat mixture over the fig layer, pressing it lightly.

Baking

  • Preheat the oven to 350°F (175°C) and bake for 20-25 minutes or until the top is lightly golden.
  • Remove from oven and let cool fully before slicing.

Notes

For perfect fig bars, ensure the fig filling is thick, press the base firmly, and avoid overbaking. Use parchment paper for easier lifting and slicing.
