Ingredients

For the cherry filling

  • 1.5 cups cherries, pitted and halved Fresh or frozen cherries work well.
  • 1/2 tablespoon lemon juice Optional, for brightening flavor.
  • 2-3 tablespoons small batch cherry jam Optional, for enhanced cherry flavor.

For the crumble topping

  • 1/4 cup all-purpose flour
  • 1/4 cup old-fashioned oats
  • 2 tablespoons brown sugar
  • 1 pinch salt
  • 1 pinch cinnamon
  • 3 tablespoons cold butter, diced
  • 1 tablespoon chopped almonds or pecans Optional for extra crunch.

Instructions

Preparation

  • Preheat the oven to 350°F.
  • Lightly butter a 5 to 6 inch mini baking dish or two ramekins.
  • Toss the cherries with the lemon juice and 1 tablespoon of the jam in the dish. Reserve the rest of the jam for drizzling on top later.

Making the crumble topping

  • In a small bowl, mix flour, oats, brown sugar, salt, and cinnamon.
  • Cut in the cold butter with your fingers until the mixture looks like coarse crumbs.
  • Stir in nuts if using.

Baking

  • Sprinkle the crumble evenly over the cherries.
  • Bake for 22 to 28 minutes, until the top is golden and the fruit is bubbling around the edges.
  • Cool for 10 minutes before drizzling with the remaining jam.
  • Serve warm with vanilla ice cream or whipped cream.

Notes

For a thicker cherry filling, stir 1 teaspoon of cornstarch into the cherries before baking. Can make the crumble ahead and store in the fridge or freezer.
