Ingredients

For the Cookies

  • 6 tablespoons unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 tablespoon packed brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely grated orange zest
  • 1 cup all-purpose flour, leveled
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon fine salt
  • 3/4 teaspoon ground cardamom
  • 1 teaspoon fresh orange juice, optional for extra citrus
  • 2 tablespoons coarse sugar for rolling, optional

Instructions

Preparation

  • Preheat your oven to 350°F and line a small baking sheet with parchment.
  • In a bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  • Beat in the egg yolk, vanilla, and orange zest. If desired, add the orange juice for extra citrus flavor.
  • In a separate bowl, whisk the flour, baking soda, salt, and cardamom. Add the dry ingredients to the wet mixture and mix just until combined.
  • Scoop 8 to 10 small balls, optionally roll them in coarse sugar, and space them on the baking sheet. Lightly flatten them.

Baking

  • Bake for 9 to 11 minutes, until the edges look set and the centers are slightly soft.
  • Let them cool on the baking sheet for 5 minutes before transferring to a rack.

Notes

If saving half the dough, wrap it and freeze for up to 2 weeks. Bake from frozen and add 1 to 2 minutes to the bake time.
