Instructions

Preparation

  • Place the boneless chicken thighs at the bottom of your slow cooker.
  • In a mixing bowl, combine the pineapple juice, barbecue sauce, soy sauce, brown sugar, and minced garlic. Mix well until the sugar is dissolved.
  • Pour the sauce over the chicken in the slow cooker, ensuring the chicken is well covered.

Cooking

  • Cover and cook on low for 5 to 6 hours or high for 3 hours until the chicken is tender and shreds easily with a fork.
  • About 15 minutes before serving, shred the chicken in the slow cooker using two forks to allow the sauce to coat the meat evenly.
  • Stir in the pineapple chunks and let them warm through for 5 minutes.

Serving

  • Serve the chicken mixture over a generous serving of cooked rice and top with sliced green onions if desired.

Notes

If you're short on time, use frozen chicken thighs straight from the freezer, but increase cooking time by about an hour. For extra flavor, add minced ginger or a splash of lime juice to the sauce. This dish freezes well, so consider making a double batch for easy meals later.
