Ingredients

For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper

For the Mango Salsa

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, minced (optional) Adjust according to spice preference
  • 1/4 cup cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Lime-Chili Sauce

  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper

For Assembly

  • 1 cup cooked rice (white, brown, or jasmine)
  • 1/2 each avocado, sliced (per serving)
  • Extra cilantro and lime wedges for garnish

Instructions

Preparation

  • In a medium bowl, toss the shrimp with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.

Grilling Shrimp

  • Preheat your grill or skillet to medium-high heat.
  • Cook the shrimp for 2 to 3 minutes on each side, until they turn pink and have a slight char. Set aside.

Making Mango Salsa

  • In a small bowl, combine the diced mango, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Stir gently, adjusting the seasoning to your taste.

Preparing Lime-Chili Sauce

  • In another bowl, whisk together the mayonnaise, Sriracha, lime juice, garlic powder, onion powder, salt, and pepper until smooth.
  • Cover and chill in the refrigerator while you assemble the bowls.

Assembling the Bowls

  • Start with a base of cooked rice in each bowl.
  • Top with the grilled shrimp, sliced avocado, and spoonfuls of mango salsa.
  • Drizzle the chilled lime-chili sauce over the top.

Garnishing

  • Finish off with extra cilantro and lime wedges for a beautiful presentation.
