Ingredients

Meat and Vegetables

  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn) Fresh vegetables can be used, chopped into small pieces.
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce

Topping

  • 4 cups mashed potatoes Pre-made or homemade mash.
  • 1 cup shredded cheddar cheese Can mix different cheeses for added flavor.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large skillet over medium heat, cook the ground beef, breaking it up with a spatula until it’s browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet, cooking for another 2-3 minutes until the onion is softened.
  • Stir in the mixed vegetables, tomato paste, beef broth, and Worcestershire sauce. Let this mixture simmer for about 5-10 minutes until heated through.
  • Transfer the meat mixture to a baking dish, spreading it evenly across the bottom.
  • Spoon the mashed potatoes on top of the beef mixture, spreading them out to create an even layer.
  • Sprinkle the shredded cheddar cheese over the mashed potatoes.

Baking

  • Bake in the oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

Notes

Allow to cool for a few minutes before serving. Pair with a garden salad or crusty bread. Optionally drizzle with gravy before serving. Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for up to 3 months.
