Ingredients

Main Ingredients

  • 450 g Italian sausage Choose between sweet or spicy based on your flavor preference.
  • 300 g Bell peppers Feel free to use a mix of colors or substitute with poblano peppers.
  • 150 g Red onion Yellow or white onions can be used if preferred.
  • 300 g Broccoli florets Snap peas or green beans are tasty alternatives.
  • 1 medium Zucchini You can also use summer squash for variety.
  • 400 g Baby potatoes Halved; sweet potatoes make a lovely swap.

Seasoning and Oils

  • 60 ml Olive oil Avocado oil is a great healthier option.
  • 2 teaspoons Garlic powder Fresh garlic can provide a stronger flavor.
  • 1 teaspoon Onion powder Omit if using fresh onions.
  • 1 teaspoon Paprika Try smoked paprika for a deeper flavor.
  • Salt and pepper Season to taste.
  • 1 tablespoon Fresh parsley Optional for a finishing touch.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F). This ensures everything cooks evenly.
  • Wash and chop your vegetables. Slice the bell peppers, red onion, zucchini, and halve the baby potatoes.

Mixing Ingredients

  • In a large bowl, combine the chopped vegetables and baby potatoes. Drizzle with olive oil and sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss everything together until the veggies are well-coated.

Baking

  • Spread the vegetable mixture evenly on a large baking sheet. Nestle the Italian sausages among the veggies.
  • Place the sheet pan in the preheated oven and bake for about 25 to 30 minutes. Halfway through, give the pan a gentle shake to help everything cook evenly.
  • Check for doneness; the sausages should be cooked through and the veggies tender and slightly caramelized. If you prefer extra crispiness, broil for an additional 2-5 minutes.

Serving

  • Once done, remove from the oven. Optionally, sprinkle fresh parsley over the top for a burst of color and flavor.
