Ingredients

For the Dough

  • 60 ml milk
  • 30 g animal fat, shortening, or butter You can use any of these fats as per availability.
  • 1/2 tsp salt
  • 100 g coarsely ground oats Rolled oats can be used but may change the texture.

Preparation

  • In a saucepan over medium-low heat, combine the milk, fat, and salt. Stir gently until the fat has melted completely, then remove from heat.
  • Add the coarsely ground oats to the saucepan and mix until everything is fully combined into a dough.
  • Turn the dough out onto a lightly floured cutting board. Shape it into a rectangle about 1/4 inch (approximately 6 mm) thick.
  • Using a sharp knife, cut the dough into sections of your desired size, whether squares, rectangles, or triangles.

Cooking

  • Heat a cast iron skillet over medium heat. Once hot, add the bannocks to the skillet.
  • Cook the bannocks for about 3-5 minutes on each side, or until they are golden brown and slightly crispy.

Notes

For extra flavor, consider mixing in herbs or spices like thyme or cumin. They can be frozen and reheated when ready to enjoy.
