Ingredients

For the Brie Bites

  • 1 wheel Brie Cheese
  • 1/2 cup Unsalted Roasted Pistachios, finely chopped
  • 1 tablespoon Honey
  • 1 tablespoon Fresh Rosemary, minced
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper, freshly cracked
  • 1 sheet Puff Pastry, chilled
  • 1 large Egg, for egg wash
  • 1/4 cup Optional Garnish: Cranberries or Pomegranate Seeds

Instructions

Prepare the Oven and Baking Sheet

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Mix the Filling

  • In a mixing bowl, combine the finely chopped roasted pistachios, honey, minced rosemary, sea salt, and cracked black pepper. Stir the mixture until everything is evenly blended.

Prepare the Puff Pastry

  • Roll out your chilled puff pastry into a flat sheet, about 1/8 inch thick. Cut the pastry into 3x3 inch squares.

Assemble the Bites

  • Place a puff pastry square on the prepared baking sheet and center a slice of Brie atop each square. Spoon the pistachio mixture over the Brie.
  • Fold the corners of the pastry over the Brie, pressing to seal them tightly.

Egg Wash and Bake

  • In a separate bowl, beat the egg to create an egg wash. Gently brush the tops and sides of each pastry-wrapped Brie with the egg wash.
  • Bake in the preheated oven for 15-20 minutes or until the bites are golden brown and puffed up, and the Brie is softened.

Garnish and Serve

  • Remove from the oven and allow to cool for a few minutes. Garnish with cranberries or pomegranate seeds just before serving.

Notes

These bites can be assembled in advance and kept in the refrigerator for a few hours before baking. Consider adding a pinch of nutmeg to the pistachio mixture for an extra layer of flavor. They pair well with a fresh salad, crusty bread, or a fruit and cheese board.
