Instructions

Preparation

  • Slice the cabbage into thin shreds, cut the onion into thin half-moons, and mince the garlic.
  • Warm a wide skillet over medium heat and add the butter and olive oil.

Cooking

  • Once the butter is melted and glossy, add the onions with a pinch of salt. Cook until they soften and turn lightly golden.
  • Add the minced garlic and stir for 20 to 30 seconds until fragrant.
  • Add the sliced cabbage to the skillet, sprinkle with additional salt and pepper, and stir.
  • Cook, stirring every minute, until the cabbage softens and caramelizes, about 10 minutes. Adjust cooking time based on desired tenderness.
  • Finish with a small knob of butter and a splash of vinegar or lemon juice. Taste and adjust seasoning as needed.

Notes

For a heartier dish, consider adding sliced smoked sausage or bacon. For a vegan option, substitute olive oil for butter and add soy sauce or nutritional yeast.
