Ingredients

For the filling

  • 500 g beef chuck, cut into chunks
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 3 tablespoons all-purpose flour
  • 500 ml beef stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For the pie

  • 1 sheet of puff pastry
  • 1 egg beaten (for glazing)

Instructions

Preparation

  • Preheat your oven to 180°C (350°F).
  • In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until they become caramelised and golden.
  • Add the beef chunks to the pot and cook until they are nicely browned on all sides.
  • Sprinkle the flour over the beef and onions, stirring well to coat everything evenly.
  • Gradually pour in the beef stock while mixing continuously to avoid lumps.
  • Add the thyme, rosemary, salt, and pepper to the mixture. Bring it to a boil, then reduce the heat and let it simmer for 1-2 hours until the beef is tender and flavourful.
  • Once the beef filling is ready, pour it into a pie dish and let it cool slightly.
  • Cover the beef mixture with the puff pastry, trimming any excess to fit the dish. Make several small slits in the pastry to allow steam to escape.
  • Brush the pastry with the beaten egg for a lovely golden finish.

Baking

  • Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up.

Notes

For an extra layer of flavour, consider adding a splash of Worcestershire sauce or a teaspoon of mustard to the beef filling. You can also include diced carrots or mushrooms in the beef mixture for added texture and nutrition. Leftovers can be reheated in the microwave or oven.
