  • 1 sleeve Saltine crackers (about 38 crackers)
  • 1 cup butter, cut into cubes 226 g
  • 1 cup brown sugar, packed 200 g
  • 2 cups mini semi-sweet chocolate chips 340 g
  • 1/3 cup finely chopped pecans, or your choice of toppings About 40 g

Preparation

  • Preheat your oven to 375°F (190°C). Line a rimmed 10 by 15 jelly roll pan with aluminum foil, then coat it with nonstick spray.
  • Arrange the Saltine crackers on the pan in a single layer, ensuring they cover the bottom completely.

Cooking

  • In a small saucepan, combine the butter and brown sugar over medium heat. Stir until the butter is melted, then bring the mixture to a boil. Continue cooking for 3 minutes while stirring constantly.
  • Once boiled, promptly pour the caramel mixture over the Saltines, making sure every cracker is covered completely.
  • Bake in the preheated oven for 7 to 8 minutes until a golden layer of toffee forms.
  • Remove the pan from the oven and immediately sprinkle the mini chocolate chips evenly over the top of the baked toffee.
  • Let the chocolate sit for a couple of minutes to soften, then use a spatula to spread the melted chocolate evenly across the crackers.
  • Before the chocolate sets, sprinkle your chopped pecans or other toppings over the surface.
  • Allow the toffee to stand at room temperature until nearly set, then chill it in the fridge for about 2 hours until firm.
  • Once set, break the toffee into pieces and enjoy this crunchy, sweet treat!

Notes

Serve in a decorative bowl or on a colorful platter, garnished with extra chopped pecans or a sprinkle of sea salt. Pairs well with coffee or tea.
