Instructions

Preparation and Roasting

  • Heat the oven to 425°F. High heat is essential for caramelizing the sweet potatoes.
  • Toss the sweet potato chunks with olive oil, salt, pepper, and cinnamon on a large sheet pan, ensuring they are evenly spaced.
  • Roast for 20 minutes, then stir and flip the pieces, returning the pan for an additional 10 minutes.
  • Scatter the walnuts over the sweet potatoes and roast for another 5 to 7 minutes until they smell toasty.
  • Remove from the oven and immediately drizzle with warm honey, tossing gently to coat.
  • Allow to rest for 3 to 5 minutes to let the honey settle into a glaze.

Notes

For variations, consider adding a pinch of cayenne for spice or swapping honey for maple syrup. Leftovers can be stored in a sealed container for up to 4 days and reheated. Allow sweet potatoes to sit in cold water if you prepare them a day in advance.
