Ingredients

For the Sweet Potatoes

  • 3 medium sweet potatoes, peeled and sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 1 tsp cinnamon
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste

Toppings

  • 1 wheel Brie, sliced into small wedges
  • ½ cup dried cherries
  • ½ cup toasted walnuts, roughly chopped
  • 1–2 tbsp honey or hot honey For added sweetness
  • Fresh rosemary (optional) For garnish and added flavor

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
  • In a large bowl, toss the sweet potato rounds with olive oil, cinnamon, smoked paprika, garlic powder, salt, and pepper until they are well-coated.

Roasting

  • Spread the sweet potato rounds in a single layer on the baking sheet.
  • Roast them in the oven for 20–25 minutes, flipping halfway through, until they are golden and tender.
  • Once out of the oven, immediately top each sweet potato round with a wedge of Brie, allowing the heat from the potatoes to soften the cheese.

Finishing Touches

  • Sprinkle the dried cherries and toasted walnuts over the warm Brie.
  • Drizzle lightly with honey or hot honey for that perfect touch of sweetness.
  • If desired, garnish with fresh rosemary leaves before serving warm.

Notes

These rounds can be prepared ahead of time and stored in the fridge before roasting. Serve with grilled chicken or fish, or as a snack for gatherings. Try substituting Brie with creamy goat cheese or cheddar for different flavors.
