Ingredients

Egg Mixture

  • 8 large large eggs
  • 0.5 cup ricotta cheese (whole or part skim) Can use either whole or part skim.
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Fillings

  • 0.5 cup cooked breakfast meat (like bacon or sausage) Can substitute with veggies for a vegetarian version.
  • 0.5 cup cheddar cheese, shredded Can experiment with different cheeses like feta or mozzarella.

Instructions

Preparation

  • Preheat your oven to 325°F (165°C). Grease a nonstick muffin tin with cooking spray and set it aside.
  • In a blender or food processor, combine the eggs, ricotta cheese, garlic powder, salt, and black pepper. Blend until everything is well mixed and smooth.
  • Divide the breakfast meat and shredded cheddar cheese evenly among the muffin tins.
  • Carefully pour the egg mixture into each of the 12 muffin tins, filling them equally.

Baking

  • Place the muffin tin in the center rack of your oven and bake for about 20 to 23 minutes or until the egg bites are cooked through.
  • Let them cool on a wire rack for a few minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. You can also freeze these bites in an airtight container for up to a month. Serve with fresh fruit, a light salad, or as a snack topped with hot sauce, fresh herbs, or sliced avocado.
