Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy for about 2-3 minutes.
  • Mix in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until a soft dough forms.
  • In a small bowl, mix the rolled oats and brown sugar. Take 2-3 tablespoons of the cookie dough and combine it with this mixture to create a crumbly topping.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Use your thumb or a spoon to make a small indentation in the center of each.
  • Spoon about 1 teaspoon of raspberry jam into each indentation.
  • Sprinkle the oat-sugar mixture on top of the jam.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

For cleaner centers, consider chilling the dough for 15-30 minutes before shaping. These cookies pair beautifully with tea or ice cream, and can be dusted with powdered sugar for an elegant touch.
