Ingredients

Dumpling Dough

  • 250 g quark or curd cheese Can be substituted with ricotta or cottage cheese.
  • 1 large egg
  • 80 g semolina Helps bind the dumplings; alternative flours may alter the consistency.
  • 1 pinch salt

Apple Filling

  • 2 medium apples, peeled and diced Choose firm varieties like Granny Smith for balanced tartness.
  • 1 teaspoon cinnamon

For Cooking and Serving

  • 40 g butter Can substitute with non-stick cooking spray.
  • 60 g breadcrumbs Whole wheat breadcrumbs may be used for added fiber.

Instructions

Prepare the Dough

  • In a mixing bowl, combine the quark, egg, semolina, and salt. Mix until the ingredients form a slightly sticky dough. Cover and let sit for 20 minutes.

Prepare the Apple Filling

  • While the dough is resting, peel and dice the apples. In a small bowl, combine the diced apples with the cinnamon, mixing well to coat.

Form the Dumplings

  • Once the dough has set, wet your hands to prevent sticking. Take a small portion of the dough and flatten it into a circle about 1/4 inch thick.
  • Place a spoonful of the cinnamon apple mixture in the center of the dough circle. Fold the dough over the filling and pinch the edges to seal the dumpling.

Cook the Dumplings

  • Bring a pot of water to a gentle boil. Drop the dumplings into the water and let them simmer for about 10–12 minutes until they float to the surface.
  • In a frying pan, melt the butter over medium heat. Add the breadcrumbs and toast them until golden brown, stirring frequently.
  • Using a slotted spoon, gently remove the dumplings from the boiling water and roll them in the toasted breadcrumbs before serving.

Notes

For a richer flavor, try adding a bit of vanilla extract to the dough. Serve warm topped with extra cinnamon or yogurt. Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or in a pan over low heat.
